Four Flavors Pound Cake

1.75 cups sifted cake flour
2.00 teaspoons baking powder
0.25 teaspoons salt
0.75 cups white sugar
0.50 cups vegetable oil
0.50 cups skim milk
0.75 teaspoons vanilla extract
0.50 teaspoons almond extract
0.50 teaspoons lemon extract
0.25 teaspoons rum extract
4.00 egg whites, stiffly beaten


Spray the bottom of a 9 x 5 x 3 inch loaf pan with cooking spray, dust with flour and set aside. Combine flour, baking powder, salt, and sugar. Add oil and milk, beat at medium speed with an electric mixer until batter is smooth (batter will be thick) add extracts, fold in about one third of the egg whites. Gently fold in remaining egg whites. Pour batter into prepared pan. Bake at 350-degrees f for 40 minutes, or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes, remove from pan, and finish cooling on a wire rack.
