0.33 cup vegetable shortening
0.75 cup sugar
2.00 eggs
0.75 cup molasses
1.00 cup coarsely chopped fresh cranberries
2.00 cups unsifted flour
1.00 cup quick cooking oatmeal
2.00 teaspoons baking powder
0.50 teaspoon baking soda
0.50 tap ground cardamom
Grated rind of 1 orange
In large bowl cream shortening until fluffy. Beat in sugar, eggs, molasses and cranberries. Add remaining ingredients and beat until well blended. Pour mixture into a greased and floured 13 x 9 x 2 baking pan. Bake at 350 degrees for 30 to 35 minutes or until puffed and firm to touch in center. Cool in pan and then cut into 1 x 2 inches bars.
