Baked Fish Parmesan

Fish, whole or filleted
Bacon strips
Chopped parsley
Olive oil
Salt and pepper
Crumbs
Parmesan cheese
Lemon juice or white wine


Use either small fish, cleaned and boned, or fillets. Rub the fish with olive oil or butter, salt and pepper. Dip it in a mixture of fine crumbs and parmesan cheese. Lay the fish on strips of bacon in an oblong baking dish. Add a few squeezes of lemon to the top, or a little white wine. Bake until the fish is tender, adding a tablespoon of wine or water if necessary. When done, pour the sauce over the top and add a little more cheese if desired. This is good served with a pasta and white wine.
