1 medium irish (white) potato
1 cup smooth variety peanut butter
2 (1 pound) boxes confectioners sugar
Boil potato until tender; peel potato and mash potato until smooth. Add confectioners sugar until dough is very stiff. Roll out onto powdered sugar surface until thin. Spread peanut butter lightly over entire dough. Roll up jelly roll fashion and slice in small sections. Cover tightly and refrigerate until ready to serve.
