Coffee Mocha Cake

2/3 cups shortening or butter or margarine, softened
2 cups cake flour, sifted
1 1/4 cups sugar
1 tablespoon instant coffee
1 teaspoon salt
1/2 teaspoon cream of tartar
1/4 teaspoon baking soda
1 teaspoon vanilla
1/2 cup water
3 eggs
2 1 ounce square baking chocolate, melted
Powdered sugar

Preliminaries: Preheat oven to 325 degrees. Grease a standard size loaf pan with butter or margarine and line with parchment paper.

1. Mix shortening, cake flour, sugar, coffee, salt, cream of tartar and baking soda in large bowl.

2. Add vanilla to water and mix into flour mixture until damp. Beat 2 minutes.

3. Add eggs and melted chocolate. Beat 1 minute.

4. Pour into paper lined loaf pan and bake 65-70 minutes.

5. Cool in pan. Sprinkle powdered sugar over top when cool.
