Carrot Bars

Servings:
Makes Two 9x13 pans

Bake Temp:
350

Cook Time:
15-25 minutes

Ingredients:

Cake

4 eggs
2 C. sugar
2 tsp soda
2 C. flour
2 tsp cinnamon
1 tsp salt
1 1/2 C. vegetable oil
3 jars strained carrots (yes, that's right...3 jars baby food)


Homemade Cream Cheese Frosting

3 1/2 C. powdered sugar
1/2 C. margarine
One 8oz package of cream cheese
1/2 tsp vanilla
1 C. nuts (to sprinkle on top of the frosting - optional)

Directions:

Mix together cake ingredients and put into two 9x13 pans. Bake @ 350 degrees for 15-25 minutes. Smooth on frosting after cake cools. Cut into squares and keep bars refrigerated. Enjoy! Even people who THINK they don't like carrot cake will love these carrot bars!
