PRAWNS WITH LOBSTER SAUCE
1 pound prawns
1 1/2 tablespoons fermented black beans
1 garlic clove, minced
1 slice ginger root
1 slice fresh ginger
1 teaspoon sugar
3 tablespoons oil
1/2 pound ground pork
2 teaspoons hot bean paste
2 tablespoons oyster sauce
1/4 teaspoon salt
2/3 cup water
1 egg
1 scallion, chopped
Shell, devein and rinse prawns. Slice in half lengthwise (butterfly them). Mash black bean sauce with garlic, ginger and sugar. Set aside. Add 3 tablespoons of oil to wok. Cook pork 2 minutes until not pink. Add black bean mix. Add prawns and cook 1/2 min on hot. If you like, add pinch of hot bean paste (optional); add oyster sauce, salt and water. Bring to a boil, cover wok, and cook for 1 minute. Stir in one raw egg. Add scallions. Mix a little cornstarch with water. Add to wok. Stir until gets somewhat thick.
