2 cups sugar
1 1/2 cups mazola oil
4 eggs
2 cups flour, sifted
1 teaspoon cinnamon
2 teaspoons baking soda
1 teaspoon salt
3 cups carrots, finely grated
1/2 cup nuts, chopped
===icing===
8 ounces cream cheese
1 pound powdered sugar
1/2 cup coconut, optional
2 teaspoons vanilla
1/4 pound butter
Using electric mixer, combine sugar and cooking oil. Add eggs and beat until well mixed. Mix in flour, which has been sifted with cinnamon, salt and baking soda. Slowly mix in carrots and nuts. Pour into greased and floured pan. Bake in 300 degree oven for 35-40 minutes or until done.
Icing: Soften cream cheese, blend in butter; then add all other ingredients. Keep in refrigerator.
