Cinnamon Sugar Butter Cookies

3.00 tablespoons sugar
1.00 tablespoon ground cinnamon
2.50 cups all purpose flour
0.50 teaspoon baking soda
0.25 teaspoon salt
1.00 cup dark brown sugar
0.50 cup white sugar
1.00 cup salted butter, softened
2.00 large eggs
2.00 teaspoons pure vanilla extract

Preheat oven to 300 degrees f. In a small bowl combine sugar and cinnamon for topping. Set aside. In a medium bowl combine flour, soda and salt. Mix well with a wire whisk and set aside. In a large bowl blend sugars with an electric mixer set at medium speed. Add butter and mix to form a grainy paste. Scrape sides of bowl, then add eggs and vanilla. Mix at medium speed until light and fluffy. Add flour mixture and blend at low speed just until combined. Do not over mix. Shape dough into 1" balls and roll each ball in cinnamon-sugar topping. Place on ungreased cookie sheets, 2" apart. Bake 18-20 minutes. Immediately transfer cookies with a spatula to a cool, flat surface.
