Coconut Rolls (like Mexican Coconut)

1/2 cup butter
1 teaspoon vanilla
1 cup sweetened condensed milk
3 cups flaked coconut
4 1/2 cup powdered sugar

In a large glass or plastic bowl, melt butter in microwave. Add the coconut, milk and vanilla. Blend in powdered sugar thoroughly. Shape into logs about 4-5 inches long and 3/4 inch round. Heat griddle. Spray with non-stick spray. Place coconut logs on hot griddle roll and sizzle. Remove and place on wax paper. Let cool. Then wrap each roll in plastic wrap. Store in cool place.
