Basic Boiled Icing

2 egg whites, unbeaten
1 1/2 cups granulated sugar
1/4 teaspoon salt
1/3 cup water
2 teaspoon light corn syrup
1 teaspoon vanilla
1/2 teaspoon almond extract


Combine the egg whites, sugar, salt, water, and the corn syrup in the top of a double boiler. Beat for about 1 minute, or until the ingredients are thoroughly mixed. Then place the pan over boiling water and beat constantly with a sturdy rotary beater, or at high speed of an electric beater, for 7 minutes. Remove the pan from the boiling water, and pour the mixture at once into a large bowl. Add the extracts and beat again until the icing is thick enough to spread. Makes 4 1/2 cups of frosting, enough to cover a large cake.
