Taco Soup

1 lb ground beef
1 small onion, chopped
2-3 garlic cloves, minced
2 cans black beans
1-2 cans kidney beans
1-2 cans pinto beans
2 cans Rotell tomatoes (the tomatoes with green chilies)
1 can creamed corn
1-2 pkgs taco seasoning (depending upon taste)
1 pkg ranch dressing mix
Fresh Cilantro chopped (to taste, optional)
Sour Cream
Cheese
Tortilla chips

Directions:
In large crock pot combine all cans, taco seasoning & ranch dressing mix and stir. Let simmer together on low heat for about 4-5 hours. Brown beef sauteing in onions & garlic. Pour into crock pot with other ingredients and allow to simmer 30 min-1 hour longer. (The longer it simmers the better it tastes) About 15 minutes prior to serving stir in cilantro.

Serve with cheese, sour cream & chips on top.

In place of the Pinto Beans you may also use 2 cans of Sante Fe flavored beans, black beans with jalepenos and use mexi-corn instead of creamed corn.
