Potato Salad

6 slices bacon, chopped
1 cup sugar
1 egg, beaten
1 tablespoon flour
1 teaspoon prepared mustard
1/2 cup water
1/2 teaspoon salt
Dash of pepper
6 medium boiled potatoes, diced
6 medium boiled potatoes, diced
4 hard-cooked eggs, diced
2 stalks celery, chopped
1 small onion, chopped
1 tablespoon parsley, minced


Fry bacon. Mix sugar, beaten egg, flour, mustard, vinegar, water, salt and pepper. Add to bacon and drippings. Boil until slightly thickened, stirring constantly. Mix remaining ingredients. Add dressing. Serve cold. Garnish with parsley sprigs.
