2 cups water
2 cups sugar
4 tablespoons butter
2 teaspoons cream of tartar
Vanilla, orange, lemon, almond, peppermint or other flavoring
Boil everything except the flavoring in a saucepan until when you drop a bit of the candy into cold water, it turns brittle right away. (if you use a candy thermometer, it should read 268 degrees). Stir in a teaspoon of vanilla, or half that amount of another flavoring. Pour the mixture into a buttered pan so it can cool down for a while. As soon as you can handle it without saying ouch (this does not mean cool, it means as hot as you can stand it), butter your hands. Pick up the candy, pull it quickly, put it back together, pull it again, and keep going until it gets white and shiny. If you are doing it with someone else, you pull the candy away from one another, then walk quickly back together to double up the rope. Pull again. When it looks like taffy and is getting cool, stretch it out in ropes on waxed paper and cut it into short lengths with scissors before it gets too hard.
