2 1/4 cups flour
1/2 teaspoon salt
1 1/4 teaspoons ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
1/4 cup butter
1/2 cup brown sugar
2 large apples
1/2 cup shortening
3 tablespoons sugar
1 egg
1 cup molasses
1 cup boiling water
Preheat oven to 375 degrees f. Sift together flour, spices and baking soda. In a 10-inch cast iron skillet, melt the butter. Sprinkle the sugar evenly over it. Peel and core apples, slice them. Arrange apples, overlapping on top of sugar. With electric mixer at medium speed, beat together the shortening, sugar and the egg until very creamy. Combine the molasses and the water. At low speed add the flour and molasses. Mix, alternating to the egg mix. Beat well after each addition. Spoon batter over apples and bake 45 minutes or until done. Loosen around the edges with spatula; invert onto plate; let stand 3 to 4 minutes, then remove from skillet. Serve warm with soft ginger ice cream.
