2 1/4 cups sifted cake flour
1 1/2 cups granulated sugar
2 1/2 teaspoon double-acting baking powder
1 teaspoon salt
3/4 cup soft emulsifier-type shortening
1/2 cup milk
1 teaspoon orange extract
1/2 teaspoon almond extract
3 medium eggs, unbeaten
1/4 cup milk
Start heating oven to 375 degrees f. Grease, then line with waxed paper, bottoms of 2 1 1/4"-deep 9" layer pans. Into large electric mixer bowl, sift together flour, sugar, baking powder and salt. Drop in shortening; pour in 1/2 cup milk, extracts and 1 egg. With mixer at low to medium speed, beat 2 minutes, scraping bowl and beaters as necessary. Add 1/4 cup milk, 2 eggs; beat 2 minutes longer. Turn into pans; bake 25 minutes, or till done. Cool on wire racks about 10 minutes. Remove from pans; peel off paper; cool on racks.
