2/3 cup butter or margarine, softened
1/2 cup sugar
1/2 cup packed brown sugar
1/4 cup milk
1 egg
2 cups all-purpose flour
3/4 cup baking cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Filling:
2 3/4 cups confectioners' sugar
1/4 cup half-and-half cream
1/4 teaspoon peppermint extract
1/4 teaspoon salt
Green food coloring
In a mixing bowl, cream butter and sugars. Add milk and egg; mix well. Combine dry ingredients; gradually add to creamed mixture and mix well. Cover and chill 2 hours or until firm. Roll chilled dough on a floured surface to 1/8 inch thickness. Cut with a 1-1/2 inch cookie cutter and place 1 inch apart on greased baking sheets. Bake at 375 degrees for 5-6 minutes or until edges are lightly browned. Remove to wire racks to cool completely. Combine filling ingredients; spread on half of the cookies and top with another cookie.
