Yet another chocolate cake recipe we've tried. Can you tell that we love chocolate AND cake.... maybe I should create a chocolate cake category! lol!
1 tablet (3 ounces) mexican chocolate (or 2 ounces square semi-sweet chocolate)
1/2 cup milk
1 teaspoon vanilla extract
3 tablespoons butter (or margarine), melted
1 cup flour
1 cup sugar
1/4 cup cocoa
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 2/3 cups hot water
1/2 cup chopped nuts
Preheat oven to 350 degrees f. Grease a 9-inches square pan. Melt chocolate in one-half cup milk over low heat. Add vanilla and butter and remove from heat. Sift flour. Add one-half cup sugar, three tablespoons cocoa, baking powder and salt to flour. Add chocolate mixture to flour mixture and pour into greased pan. In a separate bowl, combine remaining cocoa and sugar. Sprinkle on top of cake mix. Pour hot water on top of all ingredients. Bake at 350f for 20 minutes or until cake appears crusted. Remove from oven and sprinkle nuts on top. Return to oven and bake 15 minutes longer or until knife inserted in center comes out clean. Serve with vanilla ice cream.
