1/4 cup vegetable oil
1/4 cup molasses
1 egg slightly beaten
1 teaspoon vanilla
1 1/2 cups flour
2 teaspoons baking powder
1 teaspoon apple pie spice
1/4 teaspoon salt
3/4 cup raisins
3/4 cup dried apricots, chopped
1 3/4 cups apple, grated
Vegetable cooking spray
Combine oil, molasses, egg, and vanilla in medium bowl; set aside. Combine: Flour, baking powder, apple pie spice, and salt. Add to molasses mixture, stirring well. Stir in raisins, apricots and apples. Spread mixture in a 9-inch square baking pan coated with cooking spray. Bake at 350 degrees for 20-25 minutes or until done. Let cool; cut into 1 1/4-inch squares.
