1 cup sugar
1 cup butter, softened
1 egg
2-1/4 cups flour
3 teaspoons cinnamon
2 tablespoons sugar
1. In large bowl, combine 1cup sugar and butter, beat until light and fluffy. Add, egg blend well. Lightly spoon flour into measuring cup, level off. Stir, in flour and 1 teaspoon of the cinnamon, mix until well blended. Cover with plastic wrap and refrigerate 1 hour for easier handling. 2. Heat oven to 350 degrees f. Grease cookie sheets. In small bowl, combine 2 tablespoons sugar and remaining 2 teaspoons cinnamon, mix well. 3. Shape dough into 1 1/2 inch balls, roll in sugar cinnamon mixture. Place 2 inches apart on greased cookie sheets. With bottom of glass, flatten each ball of dough until about 1/4 inch thick. 4. Bake at 350 degrees f. For 11 to 15 minutes or until firm to the touch. Immediately remove from cookie sheets. Make 18 cookies.
