Thai Cabbage Salad

Ingredients:

Cabbage Salad
1 small Bok Choy (Chinese cabbage) thinly sliced
1 large carrot, shredded
2 Thai chili peppers, finely chopped
3 Tbsp coarsely chopped fresh mint
4 Tbsp coarsely chopped fresh cilantro
3 Tbsp crushed unsalted peanuts

Dressing
2 scallions cut into thin dice
3 cloves garlic, thinly sliced
1/4 cup white wine vinegar
2 tsp vegetable oil
1/2 tsp freshly ground black pepper

Directions
Combine the dressing ingredients in a small bowl and allow to sit at least 30 minutes. Stir occasionally.

Toss the cabbage, carrot, chili peppers, mint, and cilantro in a large bowl. Add the dressing and toss again. Garnish with peanuts.
